Your career in a few words

A nutritionist, I provide nutritional advice in different, very complementary ways:

  • To my patients as part of my activities as a hospital practitioner in the Paris metro region.
  • To my students, since I founded a Nutritional Training School (EPM NUTRITION) and to date I have I trained around 6000 professionals in Nutritional Consulting.
  • And to consumers, because I regularly write articles on Health and Diet, and I regularly express myself in the media.

 

Why is nutrition so important today?

Because we eat 3 times a day and it is important to know how to eat well in order to be well.

It’s an art to eat Healthy and Well.

Yet, people are doubtful and anxious. So you have to reassure them and provide them with healthy, rational foundations, based on scientific truths and not just on emotions. All while preserving the pleasure of eating, of course!

 

What is the role of the egg in all of that?

The egg is a great food because it brings together so many nutritional qualities in a small volume.

Also, it is inexpensive, cooks very easily, and keeps for a long time. There are not many foods you can say that about. So there is big health potential!

Enthusiasm.

One piece of advice for eating healthy and well?

Always end your meal with a seasonal fruit.

 

Your passion for the egg?

My favourite recipe, a boiled egg with fingers of fresh bread, some good Normandy butter and a bit of Guérande salt. I’m salivating just thinking about it.
