Poached egg of the chefs salad with green lentils

  • 8 poached eggs from Ovoteam chefs
  • For lentils :
  • 300 g of lentils
  • 50 g of carrots
  • 50 g of celery branches
  • 50 g of onions
  • 3 liters of white background
  • 100 g of butter
  • For the lentil soup :
  • 100 g of lentils broth
  • 50 g of lentils
  • 50 g of butter
  • For the salad:
  • 50 g of arugula
  • 50 g of mustard greens
  • 50 g of celery sprouts
  • For the vinaigrette:
  • 300 gr of olive oil
  • 300 gr of sunfl ower oil
  • 120 gr of old wine vinegar
  • 90 gr of Dijon mustard
  • 50 gr of sesame oil
  • 50 gr of soy sauce
  • 12 gr of salt
  • 4 gr of freshly ground pepper

Recipe preparation

  1. Chop the carrot and celery into brunoise cut, chop the onion.
  2. Sweat with the butter without colouring, add the lentils and then the white stock.
  3. When the lentils are cooked, season the cooking with salt.
  4. Keep 2/3 of the lentils, drain and set aside.
  5. Mix the remaining third with the cooking juices and strain through a sieve.
  6. Then add the butter over the heat, whisk and season.
  7. Prepare the vinaigrette. Mix all the ingredients except the olive oil when obtaining a homogenous dough and blend with the olive oil.
  8. Mix the reserved and drained lentils with the vinaigrette and arrange them in ramekins.
  9. Heat the poached eggs of the Chefs in their packaging for 1 minute 30 in the microwave at 500 Watt.
  10. Remove the eggs from the pack, season and arrange them on top of the lentils.
  11. Top with the lentil soup and garnish with a few salad leaves.
